Roasted Chickpeas

Roasted chickpeas are an easy, healthy snack to make -full of fiber and protein. You can keep the chickpeas in a glass container for days to snack on.

This is also a nice appetizer for parties and large gatherings and of course they are dairy free, vegan and gluten free.

Change up the flavors adding any seasonings or flavored oils that you prefer. Make these your way and enjoy!

Ingredients:

1 can of chickpeas, rinsed and drained

2 T Extra Virgin Olive Oil

Seasonings and herbs of your choice (my favorites include a combination of several shakes of turmeric and several grinds of pepper from a pepper mill. I also enjoy using fresh rosemary).

Directions:

1. Drain the chickpeas and rinse thoroughly. Then put the chickpeas in a clean dish cloth and roll the chickpeas in the dishcloth until dry. Place chickpeas on a baking sheet lined with parchment paper.

2. Make the dressing combining oil and seasonings/herbs and blend thoroughly. Pour over the chickpeas and toss to coat. Roast at 350 degrees in your oven until the chickpeas crisp up, approximately 10 to 20 minutes depending on your oven. Watch that the chickpeas don’t burn.
