2 Bean Salad

Dairy Free Vegan Gluten Free Plant Based

This is such an easy salad to make and you probably have everything you need right in your pantry. It is loaded with fiber and protein and so good for you! Plus it’s dairy free, vegan and gluten free and the salad is made without oil!

Ingredients

1 can Great Northern beans, rinsed and drained

1 can Cannellini beans, rinsed and drained

1/4 cup red onion, diced

3-4 stalks celery, washed and chopped

5 tablespoons red wine vinegar

Salt and pepper to taste

Handful chopped, fresh herbs. I use herbs from my garden and like a combo of oregano and parsley.

1 jalapeno, seeded and chopped (optional)

Directions:

Add all ingredients to a large bowl and toss with the vinegar. Refrigerate and chill for at least 1 hour to let the flavors marinade. Serve cold or at room temperature.

  • 1/4 cup 1/4 cup red onion, diced
  • 3-4 stalks celery, washed and chopped
  • 5 T red win vinegar
  • Salt and pepper to taste
  • Handful chopped, fresh herbs. I use herbs from my garden and generally use a combo of oregano and parsley
  • 1 jalapeno pepper, seeded and chopped (optional)

Instructions

  • Add all ingredients to a large bowl and toss with the vinegar. Refrigerate and chill for at least 1 hour to let the flavors marinade. Serve cold or at room temperature.
