Recipe for grilled watermelon steak . No one will miss the meat!
- 1 small to medium watermelon, washed and peeled
- 1/2 cup brown sugar
- 2 pinches salt
- 1/2-1 cup decaf coffee grounds
In a small bowl combine the brown sugar, coffee grounds and salt to create a rub
Wash outside of watermelon and pat dry. Peel watermelon and throw peel into your compost.
Using a fork poke holes into the watermelon all the way around it. Rub the coffee mixture thoroughly onto the watermelon. Place the watermelon in a baking dish or foil pan and place on your grill on medium to high heat. Cook for about an hour and 20 minutes . The watermelon should have somewhat of a gel consistency when finished. My husband says the texture reminded him of a Filet Mignon. When down remove watermelon from the grill and let sit for 5 to 10 minutes to cool before slicing.
