Avocado Tomato Corn Salad
This is a super easy salad to make and perfect on hot summer days. Avocados are incredibly nutritious and contain more potassium than bananas. Avocados are loaded with heart-healthy monounsaturated fatty acids and loaded with fiber, helping to lower cholesterol and triglyceride levels.
- 2 avocado, diced.
- 8 oz. container cherry tomatoes, cut in half
- 1 ear fresh corn –on-the-cob, kernels cut off the cob using a sharp knife
- 1 clove garlic, chopped
- Juice 1 Lime
- Salt and pepper to taste
