Avocado Tomato Corn Salad

This is a super easy salad to make and perfect on hot summer days. Avocados are incredibly nutritious and contain more potassium than bananas. Avocados are loaded with heart-healthy monounsaturated fatty acids and loaded with fiber, helping to lower cholesterol and triglyceride levels.

  • 2 avocado, diced.
  • 8 oz. container cherry tomatoes, cut in half
  • 1 ear fresh corn –on-the-cob, kernels cut off the cob using a sharp knife
  • 1 clove garlic, chopped
  • Juice 1 Lime
  • Salt and pepper to taste


  • Add all ingredients to a bowl and toss with lime juice, black pepper, salt. Marinade in refrigerator for at least one hour before serving.Serves 2-4 people.
