Garden Fresh Salsa

A refreshing and easy to make salsa

  • 1 green pepper, seeded and stem removed and diced
  • 1 jalapeno pepper, seeded and chopped (omit if you prefer a mild salsa)
  • 3 3 medium-sized tomatoes, chopped
  • 1 cup red onion, diced
  • 2 ears fresh corn, shucked
  • 1 can black olives, chopped
  • 1 can black┬ábeans,rinsed and drained
  • 3 tablespoons apple cider vinegar
  • Handful chopped cilantro and chopped parsley
  • 1-2 teaspoons chili powder
  • Salt and pepper to taste


  • Combine all ingredients into a bowl and toss with the apple cider vinegar. Chill at least 1 hour before serving. Can be made a day ahead. arnish with the cilantro and parsley
