1 jalapeno pepper, seeded and chopped (omit if you prefer a mild salsa)
33 medium-sized tomatoes, chopped
1cup red onion, diced
2ears fresh corn, shucked
1 can black olives, chopped
1can black beans,rinsed and drained
3tablespoons apple cider vinegar
Handful chopped cilantro and chopped parsley
1-2teaspoons chili powder
Salt and pepper to taste
Instructions
Combine all ingredients into a bowl and toss with the apple cider vinegar. Chill at least 1 hour before serving. Can be made a day ahead. arnish with the cilantro and parsley
