ROASTED ORANGE CAULIFLOWER

This is a beautiful dish that can be served as a main course or as a side dish. The presentation is lovely and is perfect for a weeknight meal or a dinner party.
Ingredients :
1 large head cauliflower, washed with the green leaves removed and the center core removed. Make sure you keep the cauliflower intact and not broken into parts.
1 tablespoon extra-virgin olive oil
Juice of one orange plus zest of the orange, grated
1 teaspoon turmeric
1/2 cup of coconut milk
Handful chopped parsley or basil, or both
1/2 cup Capers, wash and drain these to remove the brine
½ cup chopped pecans
Directions:

Preheat the oven to 400 degrees

Place cauliflower in a large Dutch oven or deep casserole sprayed with nonstick cooking spray(make sure the cooking spray is dairy free).

In a bowl stir together the orange juice, the orange zest , turmeric and oil. Pour this mixture over the cauliflower and rub it into the cauliflower to make sure it is evenly distributed and absorbed. Add salt and pepper to taste . Note: You probably will not need a lot of salt, if any, because the Capers are naturally salty.

Bake for about 40 minutes. Keep a lid on the pot for half of that cooking time. After 40 minutes uncover and pour the coconut milk over the cauliflower. Cover and bake for about 10 more minutes. Before serving, spoon remaining liquid over cauliflower. Sprinkle cauliflower with the basil and/or parsley and chopped nuts.
