This is a super easy recipe for making sweet potato pancakes. These pancakes are delicious and full of fiber, vitamins A and C, and potassium from the sweet potato. This is also a great recipe for using up leftover, baked sweet potatoes. Sweet Potato Pancakes are served at The Wave restaurant at Walt Disney World’s Contemporary Resort and are the inspiration for this recipe.


Ingredients:
1 sweet potato, roasted, and flesh scooped out


 

1 pancake mix -dairy free/gluten free pancake mix – use recipe on packaging calling for 1 cup of mix


1/2 cup walnuts chopped


1 tablespoon cinnamon

 
Directions: 

1. Roast  sweet potato and scoop out the potato flesh from the skin. Throw the skin into your compost heap.

2. Make pancake batter according to package directions and add an additional 1/2-1 cup liquid to the batter (For ex. if the mix calls for 1 cup milk, add 1 1/2 – 2 cups nut milk). I prefer coconut milk with this recipe.


3. Fold in the walnuts to the batter along with the sweet potato and cinnamon. Stir to Combine. Do not over stir. Make pancakes according to package directions.

Optional : Top with coconut and your favorite syrup

Ingredients

  • 1 sweet potato, roasted, and flesh scooped out 
  • 1 package mix – dairy free/gluten free pancake mix – use recipe on mix calling for 1 cup of mix
  • 1/2 cup 1/2 cup walnuts chopped  
  • 1 tablespoon cinnamon

Instructions
