Every February for my birthday, my mother would make Rice Krispy Treats. I would take them to elementary school to celebrate with classmates. I never wanted cupcakes like the other kids brought in. All these years and birthdays later, I still enjoy Rice Krispy Treats on my birthday.

Rice Krispy Treats are an easy no-bake treat to make. They call for just a few ingredients and will last several days in the refrigerator in an air tight container. Although, I will admit , they generally don’t last long in my house. Any brand of Rice Krispy cereal will work. Of course, always read the label to make sure it is dairy and gluten free. I almost always buy the store brand

Here’s the recipe so you can try them this fun treat!


Ingredients:
1 Box Rice Krispy cereal
2 Bags vegan, gluten free marshmallows
3 Tablespoons Vegan butter. I use Earth Balance. Add an addition tablespoon of butter as needed until you reach the correct consistency.

Directions:
Melt butter in a large pot over low heat until melted. Add marshmallows and stir until marshmallows are melted. Remove from heat.


Add Rice Krispy cereal, one cup at a time, stirring until well coated (I use a spatula sprayed with cooking spray to prevent sticking)


Press mixture into 13x9x2 inch pan lined with parchment paper and coated with cooking spray (dairy free). Press down into pan. Cool completely. Cut into squares and enjoy!
