I won the lottery!

Yesterday I was extremely lucky and blessed to be vaccinated for the virus, my first dose of Moderna.
.
I kept saying all I wanted for Christmas was the vaccine and I got it a few weeks later! And it's an early birthday gift too. I cried as I was injected - the emotions I felt were overwhelming. I am so grateful to #Science and the scientists that brought us this vaccine. I have respiratory issues and #Asthma which is a known risk factor for the virus. I cannot wait to get my second dose and 10 days later have that 95% Immunity! NY opened up the vaccine to educators so I was qualified
.
Although nothing will change: I will still be wearing a mask and goggles when I go out and still staying home since not enough of the world is vaccinated yet. BUT #BetterDaysAreComing
.

I can't wait for you all to get this #vaccine !

So many people have told me they think cooking dri

So many people have told me they think cooking dried beans is difficult and time-consuming. Neither is true.

Dried beans practically cook themselves and are so affordable. This bag cost less than a dollar and equals several cans of beans!
.
The beans will cook faster if you soak them overnight. Just throw them into a big pot with enough water to cover. The next morning drain the beans and add fresh water to cover. Bring to a boil then simmer on low until done. You'll know they're done when they have the same texture as canned beans.

Generally I cook a whole bag and then freeze on portion sized containers to use later in soup, chili, salads or other dishes.

Happy New Year 2021 and thanks for all the likes and love during 2020, a truly horrible year. I was really looking forward to 2021 until a few days before the end of 2020 when my husband fell on black ice breaking his leg in two spots and completely tearing the rotator cuff of his shoulder. He will be out of work for months and he's having surgery to repair the leg on Monday. I keep asking why did this happen and not getting an answer.

My cousin reminded me that 2020 started off pretty well and then went downhill, so perhaps 2021 will start off bad and go uphill. Let's hope
