Watermelon Steak

This has to be my most unique recipe ever! This dish will wow your taste buds and have you asking for seconds! Of course the recipe is dairy free, vegan and gluten-free and it’s the perfect summer recipe when watermelon is plentiful. This dish is best using a seedless watermelon.

In addition to being delicious, watermelon comes loaded with health benefits. It’s red color comes from lycopene , an antioxidant that studies show can help curb your risk for cancer and diabetes in conjunction with a healthy lifestyle. It has anti-inflammatory properties and is rich in Vitamins A, B6 and C. And since watermelon is 92% water, it’s a great way to stay hydrated on a hot summer day. (Source:WebMd)

Ingredients:

1 small to medium watermelon, peeled

1/2 cup brown sugar

2 pinches salt

1/2 to 1 cup decaf coffee grounds. Use more or less depending on the size of the watermelon 

Directions:

1 . In a small bowl combine the brown sugar, coffee grounds and salt to create a rub.

2. Wash outside of watermelon and pat dry. Peel watermelon and throw peel into your compost.

3. Using a fork, poke holes into the watermelon all the way around it. Rub the coffee mixture thoroughly onto the watermelon. Place the watermelon in a baking dish or foil pan and place on your grill on medium to high heat. Cook for about an hour and 20 minutes . The watermelon should have somewhat of a gel consistency when finished. When done, remove watermelon from the grill and let sit for 5 to 10 minutes to cool before slicing.
