AVOCADO TOMATO CORN SALAD

Dairy Free Vegan Gluten Free Plant Based

This is a super easy salad to make and perfect on hot summer days. Avocados are incredibly nutritious and contain more potassium than bananas. Avocados are loaded with heart-healthy monounsaturated fatty acids and loaded with fiber, helping to lower cholesterol and triglyceride levels.

Of course this salad is dairy free, vegan, gluten free.

Ingredients:

2 Avocado, diced

8 oz. container cherry tomatoes, cut in half

1 ear fresh corn –on-the-cob, kernels cut off the cob using a sharp knife

1 clove garlic, chopped

Juice 1 Lime

Salt and pepper to taste

Directions:

Add all ingredients to a bowl and toss with lime juice, black pepper, salt. Marinade in refrigerator for at least one hour before serving.

Serves 2-4 people.
