Dairy Free Easter Eats

Holidays are always difficult for those with food allergies. If the allergic person attends a holiday celebration, it is imperative that he/she discusses the menu ahead of time with the person cooking. It’s also advisable that the food allergic individual brings a dish safe to eat in order to make sure there actually is food available. Don’t forget to bring your own serving utensil to avoid cross contamination. I often host holidays at my house and not only do I like to entertain , but it’s also easier to control what is served, the ingredients used, and it’s easier to avoid cross contamination issues.

I’ve rounded up some great DairyFreeGina recipes as well as dishes from other trusted bloggers. If you are serving the traditional ham or lamb, or any other meat for that matter, be sure to carefully inspect the ingredient label. Many meats have dairy fillers injected into the meat. So enjoy the below dairy free deliciousness for brunch and dinner.

I love pancakes for breakfast and brunch. Checkout my website for Buckwheat Pancakes and Quinoa Pumpkin Pancakes, all of which can also be made gluten free using gluten free flour. Another morning recipe is Tofu Scramble with Kale, Roasted Beets and Sweet Potatoes. If you prefer, sub out the tofu with scrambled eggs.

My Wild Rice and Orzo Salad is always a mainstay on my Easter table. It’s a great dish for parties and crowds. Everyone always loves it! Make it a day or two ahead of time so the flavors marinade.

Two other Spring salads good for Easter are Spring Slaw and Shredded Kale.

I’ve adapted two recipes from my dear friend Marina to make dairy free. I always serve Pineapple Casserole and Carrot Soufflé for Easter. Both can be made ahead and baked the day of your dinner.

A light and Spring looking dessert great for Easter is Pistachio Dessert, otherwise known as “Green Crap” in my family. It may look funny but it’s delicious and of course, dairy free!
