These are the easiest healthiest cookie ever. I modified this recipe from one I saw in Cooking Light Magazine. It’s truly a make it your way type of cookie.
INGREDIENTS:
For the Basic Cookie:
2 ripe, mushy bananas
1 cup gluten free , quick cooking oats
1 teaspoon cinnamon
DIRECTIONS :
1. Put bananas in a bowl and using a fork, mash up the bananas.
2. Add the oatmeal and cinnamon to the bowl and combine with the bananas
3. Line a baking sheet with parchment paper and spray with dairy free cooking spray. Drop by rounded Tablespoon full onto baking sheet. Bake 350 for 10 minutes or until golden brown.
ADD INS:
Add as many of the below or create your own.
1/4 quarter cup Raisins or Craisins
¼ cup sunflower seeds
¼ cup vegan Mini Chocolate chips
Pumpkin pie spice instead of cinnamon
