AVOCADO TOMATO CORN SALAD
This is a super easy salad to make and perfect on hot summer days. Avocados are incredibly nutritious and contain more potassium than bananas. Avocados are loaded with Heart-Healthy Monounsaturated Fatty Acids and loaded with fiber, helping to lower cholesterol and triglyceride levels.
Of course this salad is dairy free, vegan, gluten free.
2 Avocados, diced
8 oz Cherry Tomatoes, Cut in half
One ear fresh Corn –On-The-Cob, kernels cut off the cob using a sharp knife
1 Clove Garlic, Chopped
Juice 1 Lime
Salt and pepper to taste
Add all ingredients to a bowl and toss with lime juice, black pepper, salt. Marinade in refrigerator for one hour before serving.
Serves 2-4 people.
